Seabuckthorn, also known as the „lemon of the north“, is a versatile and vitamin-rich fruit here in Mecklenburg-Vorpommern. It is not only a little pick-me-up, but is also often used as a cold killer or in cosmetics. Various treats are made from the power berry:

liqueur, syrup, jam, jelly, tea or even salami.

Buckthorn products are available in many local shops such as  erhältlich und warten zu schnabuliert zu werden.

Spring

Sea buckthorn shake

A fresh kick for in-between meals or simply a delicious breakfast? There is a wide variety of sea buckthorn smoothies and shakes. The following smoothie is not only super easy, but also perfect to take with you.

Ingredients

  • 2 small bananas
  • 800 ml milk
  • 8 tablespoons of sea buckthorn juice

Preparation
Put all ingredients in a blender, blend and enjoy pure vitamins.

Summer

Sea buckthorn ice cream

In summer on the beach in MV, there is hardly anything more refreshing than sea buckthorn ice cream. Full of vitamins, fruity and perfect as a little dessert in between meals.

Ingredients

  • 2 mini bananas
  • 2 tbsp sea buckthorn-orange fruit spread
  • 50g natural yogurt
  • 100g cream

Preparation
Peel the bananas and crush the flesh. Fold the sea buckthorn spread and natural yoghurt into the banana mixture. Then whip the cream until stiff and add to the mixture. Pour into the desired mold and chill for at least 3 hours.

Autumn

Sea buckthorn and carrot soup

Seabuckthorn is also great for adding a tangy note to savory dishes. A sea buckthorn and carrot soup is particularly delicious in the fall.

Ingredients
  • 200g of sea buckthorn berries
  • 600g carrots
  • ½ stalk of leek
  • 1 apple
  • 2 tablespoons of vegetable oil
  • 750 ml water
  • Salt & pepper

Preparation
Puree the sea buckthorn berries with a little water, pass through a sieve and collect the puree. Then slice the leek and cut the apples and carrots into pieces. Sauté the vegetables briefly in a pan and deglaze with water. Season to taste with salt and pepper and leave to simmer for approx. 15 minutes. Finally, puree everything and stir in the sea buckthorn puree.

This little vitamin bomb is not only a pleasantly warming punch, but also a perfect cold killer. It is offered at various Christmas markets in MV but is also great to prepare yourself.

Ingredients (for 4 people)

  • 250 ml sea buckthorn juice, unfiltered
  • 750 ml naturally cloudy apple juice
  • 1 tsp cinnamon
  • 3 tablespoons honey
  • 4 large cinnamon sticks
  • can also be enjoyed with a dash of rum if desired

Preparation
Combine the sea buckthorn juice, apple juice, honey and cinnamon powder and heat. As soon as it is warm enough, pour into cups and garnish with a cinnamon stick.
